Ways to prepare eggs
Our favorite way to use eggs through the day is hard boiled. With this easy-peel method, we have them on hand in the refrigerator for the kids to use for breakfast, lunch or snacks. My family also loves deviled eggs. That’s our go-to for potlucks and parties, and they’re always enjoyed!
When making eggs for dinner, we prefer scrambled with cheese, omelets or dinner egg casseroles. I like adding vegetables and savory flavors to make “breakfast” food feel more like dinner. Of course, you can always include a savory side dish like breakfast potatoes with zucchini.
Every once in a while, we’ll be eating on the go–like on the way to a music lesson or sports practice. That’s when these hearty breakfast sandwiches serve as a quick dinner.

One of the easiest ways to use eggs for dinner recipes is in quiches and casseroles. Honestly, I have begun doubling up my quiche recipes and simply baking them in a casserole dish just to have enough servings for my big family.
If you’re cooking for 4 or less people, a glass pie plate is enough for a crustless quiche.
What goes with eggs for dinner
We like to have savory flavors like vegetables and herbs with our egg recipes for dinner. So I typically make roasted potatoes or serve rolls on the side. If you prefer, go with more of a “breakfast for dinner” flavor and serve fruit.
