You may not think of shrimp as a frugal ingredient, but it is possible to make it so with the right coupons. I found the cooked shrimp on sale at Safeway a few weeks ago and had a coupon making it just $6 for 2 lbs. I don't usually spend more than .50 for a box of angel hair, and the frozen broccoli florets were on sale for $1.25. That makes this Garlic Shrimp & Broccoli Toss a 4-serving meal for under $5.00! In addition, it's a simple 5-ingredient recipe, which I love because it's so easy to make.

Garlic Shrimp & Broccoli Toss

1 lb. cooked frozen shrimp
1 bag frozen broccoli florets
2-3 cloves chopped garlic, fresh or from a jar
2-3 Tbsp. Butter or alternative (olive oil would give a slightly different flavor)
Angel hair pasta

While the water boils for the pasta, prepare the broccoli in the microwave. Defrost the shrimp by running them under cold water (per the package's instructions). In a large saute pan, melt the butter and saute the garlic. Add the shrimp and stir to heat the shrimp and coat them in garlicky buttery goodness. Add the broccoli and stir again to coat. Serve over angel hair pasta.

No, this isn't gluten-free, and I don't like shrimp, so this is a recipe I use on a night when I'm going out for a Mom's Night Out. My family loves it, though!
