Instant Pot Stuffed Peppers

I love making these stuffed peppers in the Instant Pot. They are a quick and easy dinner recipe that is perfect for those busy weeknights! When you have a lot of stuff going on the Instant Pot comes in so handy. BTW, I don’t actually have an “Instant Pot.” I opted for the more affordable Multi Cooker from Insignia, and it has been fantastic!

Whenever people ask why I use the Instant Pot to cook things I could do in the oven or on the stove, I remind them that with the pressure cooker I can set it and walk away. I don’t have to monitor things the way I would with the oven or the stove. 

What you need to make these stuffed peppers: 

 

If you’re a fan of beef with peppers and cheese (who isn’t?!), but you don’t have a pressure cooker, give this one-skillet Philly cheesesteak casserole a try.

Can I make these stuffed peppers in a different kind of pressure cooker? 

If you don’t have an Instant Pot but you have another type of electric pressure cooker (like me!) you can definitely use that to make your Instant Pot stuffed peppers or any “Instant Pot” recipes you see online.

How to make Instant Pot stuffed peppers: 

  1. Remove the tops, core, and seeds from each bell pepper.
  2. In a small bowl, stir together salt, black pepper, basil, and oregano. Measure 1 teaspoon and set aside for the sauce.
  3. Using a slotted spoon remove about ¼ cup of the diced tomatoes from the can and place in a large bowl. Pour remaining tomatoes and juice into the liner of the electric pressure cooker. Stir in water and 1 teaspoon dried seasonings. Add the trivet over the sauce.
  4. In the large bowl with the strained diced tomatoes, add the ground beef, onion, garlic, remaining, dry seasonings, rice, bread crumbs, and ½ cup mozzarella cheese. Blend together well with hands. Divide into equal portions according to the number of bell peppers.
  5. Stuff the meat mixture into each bell pepper. Position bell peppers on the trivet inside the electric pressure cooker.
  6. Close the pressure cooker and set the value to sealing. Set the pressure cooker to manual or pressure cook on high for 8 minutes. When the cycle is complete, allow the electric pressure cooker to release naturally for 6 to 8 minutes before quick release.
  7. Top each pepper with remaining cheese and cover until melted.
  8. Carefully remove the bell peppers from the pressure cooker. (Long handled tongs are especially useful.) Spoon sauce over peppers and serve.

Can I use ground turkey instead of beef? 

Of course! The cooking times for most ground meat are going to be the same when you use them for this recipe.

You can use ground chicken or ground turkey for this recipe without making very many changes to the recipe. It’s a small amount of ground meat so there’s not going to be a huge impact on flavor, texture, or cooking time.

Ingredients

  • 4 to 6 medium bell peppers
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ cup water
  • 1 (14 ounce) can diced tomatoes, divided
  • ½ pound ground beef
  • 1 onion, finely diced
  • 2 cups cooked rice
  • 2 cloves garlic, minced
  • 3 Tbsp Italian bread crumbs
  • 1 cup shredded mozzarella, divided
