Another busy weekend! We had a great day trip yesterday (look for that post soon), and the kids had a blast at Free Comic Book Day on Saturday. Hope you had a great weekend with your family, too!
With the busy-ness of the weekend and beyond, I went ahead and planned out two weeks' worth of meals. I did all the shopping last Friday, with the idea that I could do less over the next two weeks–just run in when we need milk or produce. That way, I won't be using time running errands and we have what we need for each night. I'm also going to try some new-to-me recipes from Make it Fast, Cook it Slow*, the recipe book from Stephanie at A Year of Slow Cooking. Several of her recipes from the blog are our family favorites, and there a bunch more in the book I'd like to try. Cooking in the slow cooker is perfect for busy days and nice evening when I'd rather be playing outside with the kids than working in the kitchen. Here's the plan for this week:
Monday–Cranberry Pork Roast from Make it Fast, Cook it Slow, mashed potatoes, broccoli
Tuesday– Broccoli Pie (I'll leave out the chicken), corn muffins, salad
Wednesday–Salmon Cakes, orzo, green beans
Thursday–Homemade Pizza (using the English muffins I got on sale last week), salad
Friday–Chicken & veggie stir-fry, brown rice
Saturday–Spinach and Cheese Noodles from Make it Fast, Cook it Slow, fruit salad
