Hope you’re enjoying the fall weather! We had a beautiful sunny weekend, the first one in ages, and took advantage of it.
Here’s the plan for this week:
Sunday–We ate out at a restaurant after a fun day at Dutch Wonderland in Lancaster, PA.
Meatless Monday–Spinach Pie, cornbread muffins
Tuesday–Chicken Fajitas, black beans and brown rice
Wednesday–Chicken Sausage, broccoli and angel hair pasta (I’ll have gluten-free)
Thursday–Pot roast, mashed potatoes and asparagus
Friday–Stroganoff-Style Chicken, egg noodles (for them, I’ll have GF pasta), green beans
Saturday–Soup with the leftover meat from Thurs. night, carrots, celery and onion
And, for the kids’ lunchboxes this week, I’m making:
- Pesto Turkey Rollups; deli turkey was on sale this week
- Tortellini with peas, boiled while I’m making dinner Tues. night
- Chicken salad sandwiches (made with extra chicken I cook on Tues.)
- Black beans and rice with some cheese sprinkled on top (leftovers from Tuesday)
