Busy week at our house! We're gearing up for the big twin-birthday-weekend, with 10 family members from 3 states visiting. I'm doing spring cleaning and getting ready, so I'm keeping this week's meals super-simple. But don't I always?

Meatless Monday! Corn Chowder and salad
Tuesday–Garlic-Thyme Chicken in the slow cooker, baked potatoes, green beans
Wednesday–Beef and Rice Casserole, from The $5 Dinner Mom Cookbook
Thursday–Pizza night (they're having a frozen pizza smothered in fresh veggies, and I'm making my own with a gluten-free crust), salad
Friday–Asian Fish in a Packet, brown rice
Saturday–Big crowd! The girls have requested Pulled Pork Sandwiches, broccoli slaw and Mac & Cheese Casserole for their birthday dinner.
