It’s one of those weeks, with late nights and too many activities. With that in mind, I have meals planned that I can prep earlier in the day or make very quickly with little thought. I’ll save the more time-intensive recipe for the weekend. I’m so glad the summer season is upon us; finally, our local produce is looking good. Our farmers markets open next weekend, and that will bring some yummy things too:
Meatless Monday Spinach & Feta Pasta Salad; I love how versatile this salad is, you can add in zucchini, eggplant, etc. whatever is leftover in the fridge or abundant in the garden
Tuesday Crockpot Pulled Pork Sandwiches
Wednesday Frozen Pizza (Safeway now has the Amy’s GF pizza), salad
Thursday Tilapia Fish Packets, red potatoes
Friday Taco night (with leftover fish and some pre-cooked taco meat I had in the freezer), corn shells, veggies, brown rice
Saturday Baked Mac & Cheese Casserole, broccoli
