I've heard from many that fall is their favorite time for cooking. The change in season gives you an opportunity to bring back some favorite flavors (like pumpkin!), turn the oven back on for baking, and enjoy easy meals like soups.
Each Monday, I post my dinner plans for the week. I keep things flexible; by buying all the ingredients I need for all the meals, I can make any of them that evening, depending on our schedule and other obstacles. For loads of meal inspiration and recipes, head to Menu Plan Monday at OrgJunkie.
Here's my dinner plan for this week:
Sunday–Sauteed Veggies on Angel Hair Pasta (onions, red peppers, spinach, olives, garbanzo beans and feta). I had gluten-free pasta and made regular for the rest of the family.
Meatless Monday–Fiesta Corn & Black Bean Toss mixed with quinoa
Tuesday–Roasted Chicken Drumsticks, mashed potatoes, broccoli (I'm making extra drumsticks for lunches)
Wednesday—Potato Corn Chowder, salad
Thursday–I'm cooking a bunch of chicken in the slow cooker all day; then I'll have lots of cooked chicken for upcoming meals. We'll have BBQ Chicken Sandwiches with homemade fries and broccoli slaw.
Friday–Nachos with chicken (from last night), peppers, onions, and olives. It's movie night!
Saturday–Salsa Chicken & Black Bean Soup
