I never know how time flies, but it has. Swim team starts tomorrow, and we’ll be at the pool from 5-6 every night. Plus there’s still 3 1/2 weeks of school left–what’s up with that? I’m pulling out all the stops this week on easy dinners. I need crockpot meals, stuff I can pull from the freezer (and to find the time to refill it), and quickie meals that save us from calling for pizza. It helps that I can’t eat pizza anymore; it’s so hard to do takeout now that I’m gluten-free.
Monday We BBQ’d with our neighbors. I marinated this Garlic Lime Chicken, and it was incredibly flavorful.
Tuesday Chicken & Spinach Enchiladas, salad; last time I made chicken broth in the crockpot, I used the leftover shredded chicken to make a pan of enchiladas for the freezer. I’ll defrost it overnight and set it up to cook while we’re at the pool. Instant dinner!
Wednesday Baked Mac & Cheese Casserole, broccoli (we were supposed to have this last week but we ended up BBQing with our neighbors). I’ll prep it in the morning and set it up to cook while we’re out.
Thursday Daddy’s doing dinner because I’m going out with friends (need it!). Probably hot dogs, if history repeats itself.
Friday Lazy Chicken–just some chicken breasts in the slow cooker with spaghetti sauce and veggies, served over spaghetti (GF for me)
Saturday Burgers, sweet potato fries, corn on the cob, and salad
