I don't want to think this week (you have weeks like that, too, right?). My focus is elsewhere–I'm prepping for a big yard sale Saturday, have freelance writing to complete, and am in the middle of several half-done house projects–but I still need to feed my family. Therefore, I'm relying on the “same old, same old” dinners, the ones I know everyone will eat without complaint. It's boring, but it serves our goals of eating healthy and eating together. Done.
Sunday–BBQd with our neighbors–chicken, pepper & onion Kebabs, pita bread, feta cheese, corn on the cob
Meatless Monday–Spinach Feta Pasta Salad
Tuesday–Beef Tacos, corn shells, tomatoes, lettuce, cheese, etc. Black beans & corn on the side
Wednesday–Sausage & Veggie Roast made in the slow cooker
Thursday–Pineapple Chicken (this recipe, but I don’t have any pork chops in the freezer), brown rice, broccoli
Friday–Pizza night–I'll make homemade crust using this dough recipe and we'll use whatever's left in the fridge from the week (probably mushrooms, peppers, spinach, ??)
Saturday–We're going out for Chinese food with a Restaurant Gift Certificate and earning from Saturday's yard sale.
