With another busy week of school activities and evening swim team practice, I'm planning ahead for more simple meals that I can prepare ahead of time, either in the morning or in the slow cooker. I'm saving my one stovetop meal for a night we're expecting rain. Here's the plan:
Sunday–Spaghetti and Meatballs (pulled frozen from the freezer and cooked in the slow cooker all day on low); salad
Meatless Monday–Greek Salad, pita bread, hummus
Tuesday–Slow Cooker Teriyaki Chicken (recipe coming on Friday), brown rice noodles
Wednesday–Chicken Pesto Pasta Salad
Thursday–Turkey Spinach Burgers, red potato salad, corn on the cob
Friday–Pizza at the pool; I'll pack celery, carrots, and cucumbers with dip
Saturday–Chicken Sausage sauteed with red pepper, zucchini, onion and mushrooms over quinoa
