Oh my, I'm tired! What a whirlwind weekend–18 of us in my house for a big family party celebrating the twins' birthday. Did I mention that my refrigerator broke (again) on Friday night? Chock full of food for the party. I did not fall apart. Made it through, had a great time, cuddled with my baby nephew (best stress-reliever EVER), and now starting the week exhausted. I need easy meals, meals that almost make themselves. I don't want to think, so that's when I go to our family favorites that I can make without even consulting a recipe:
Sunday–We ate out for the big birthday so I wouldn't have to cook, and because we had to toss a bunch of rotten food when the fridge broke. Expensive. Blech.
Meatless Monday! Italian Spinach Pie, gluten-free cornbread muffins
Tuesday–Lazy Chicken in the Slow Cooker (jar of sauce on top of chicken), pasta, salad
Wednesday–Beef Tacos (meat from the freezer, I cooked it last week), fixings, beans
Thursday–Chicken (dipped in crushed Corn Chex and parmesan cheese), baked potatoes, frozen peas
Friday–Slow Cooker Tortilla Soup, leftover corn muffins
Saturday–Grilling with our neighbors—yay for shared meals and good company!
