My stomach is on strike after all the restaurant meals on our vacation last week. Yes, some were healthy, but most were not. I want lots of vegetables this week, nothing fried, and to get everyone back on our daily routine, which includes me cooking and us eating at home every night:
Monday–Spaghetti and meatballs (frozen from this week), salad, broccoli
Tuesday–Turkey melts (deli turkey, Swiss cheese, roasted red peppers), broccoli cole slaw (recipe here)
Wednesday–Coq au Vin in the Crockpot (this sounds so good; I'm using chicken breasts instead because no one here likes dark meat), couscous, asparagus
Thursday–Cheese Ravioli (the dried ones from Trader Joe's) with Pesto, salad
Friday–Chicken breasts marinated in Italian dressing, baked potatoes, green beans (yawn, but easy at the end of the week)
Saturday–Homemade Veggie Pizza, salad
