My brilliant plan to have a month's meals planned out has been slightly derailed by my husband's medical status. Thank you to all of you who've commented or emailed; he is doing much better but is having his gall bladder out at the end of the month. In the meantime, he's supposed to avoid fatty foods and hope the incredible pain does not come back between now and then. So we're eating what he's eating, and I've shifted my meals around accordingly:
Monday–going to a BBQ (don't know what he'll eat there…)
Tuesday–Chicken fajitas, fixings, black beans
Wednesday–Spinach Pasta Salad
Thursday–Chicken, Peppers & Potatoes
Friday–Asian Fish in a Packet
Saturday–Pineapple Pork Chops, leftover rice, green beans
Sunday–Pizza Sticks, salad (I never got to make these last week, did you? Back on the plan for this week, though I don't know what hubby will eat instead.)
He doesn't seem too upset when I eat a bowl of ice cream or some Peanut Butter Dove Chocolates (Have you tried these? Unbelievable!) in front of him. What a trooper.
