Are you stuffed? I sure am. 🙂 Now I want to focus on simple, healthy meals and get back on our routine with both shopping and cooking. I'm also feeling the budget pinch this time of year, so my plan is to use things up–in the kitchen, that means using what I have in the pantry and freezer. For the holidays, that means using up everything from my “gift closet” and scouring my house to decorate with what I have–instead of spending any more money! I'm also decluttering my house in anticipation of 9 guests for the holidays (yes, they're staying here, at staggered times).
Back to using it up in the kitchen: yesterday, I made a quick run to the store for basics like eggs, bread and milk plus a bunch of fresh produce. Instead of buying baked goods, I plan to bake on a rainy day this week–rolls, bread, and pizza dough. I already had pork chops, ground beef, and fish in the freezer, so I'm using those for this week's meals:
Sunday–I made a double batch of Baked Ziti. We had some for dinner, I put an entire pan in the freezer for a busy night later this month, and I set aside some portions for hubby and son's lunches in the next few days.
Monday–Broccoli Pie (I just don't add the chicken) with homemade rolls
Tuesday–Super Easy Chicken Soup, leftover rolls
Wednesday–Homemade pizza (I'll make the crust in the bread machine) and carrots/celery/dip
Thursday–Baked Tilapia (I dip the fillets in mayo and then breadcrumbs and cook for 10 minutes), green peas, and rice
Friday–Pineapple Pork Chops (I might try this in the crockpot this week…), green beans, leftover rice
Saturday–Burgers with mushrooms, Unfried Fries, corn, salad
Later this week, I'll pick up ground beef on sale and do a Cook Once, Eat 10 Times cooking session. I want to get a bunch of meatballs frozen for when I have company later in the month, plus make some Meatball Soup. By taking the time early in the month to do the cooking and freezing, I'll be able to relax and enjoy my guests instead of stressing in the kitchen!
