Yet another plus to meal planning is times like this–when Mommy is so so sick and just wants all two-year-olds to please leave her alone and go watch TV already–that we can still have a decent meal. My horrible sore throat has me craving soup, and the cooler 65 degree temps outside are encouraging it. Soups are so easy (when you keep it simple), and you can make them anytime of day that you have the energy, say 9:00 this morning, and then just reheat it for dinner, leaving that 5:00 hour for important things like laying on the couch in exhaustion. Plus, soups make your house smell good. And, there's always leftovers, which make a great lunch. I just picked up a bunch of soup cookbooks from the library to get some new ideas. I welcome the return of soup this fall!
Sunday–Shredded Chicken Tacos from the Crockpot, black beans
Monday–Chicken Soup, Herb Bread from the breadmaker (this was the plan for last Saturday but we never had it)
Tuesday—Italian Spinach Pie (click there, then scroll down to see the recipe), leftover bread
Wednesday–Beef & Parm Pasta, salad (I use 3/4 pound of ground turkey and healthier pasta)
Thursday–Chicken Cacciatore in the Crockpot, spaghetti, salad
Friday–Veggie Pizza, salad
Saturday–I will be out of town, so I imagine hubby will take the kids out to eat.
