It's spring break! My kids and I had big plans–we're starting our own Square Foot Garden--but now it's pouring rain with flood warnings and won't clear up till Wednesday. So I've already declared today “Pajama Day” and we'll enjoy some fun indoors together instead. I did promise them one day of “they get to pick,” meaning they can melt their brains with TV, a movie, video games, etc.if that's what they choose. Just not all week. Today's perfect for that.
I hope to have the time this week to cook in large batches; I made 3 dozen waffles yesterday to have in the freezer, and I know the kids will “help” me with a baking day if I want to stock us up on bread, muffins, etc. Hopefully either ground beef or chicken will go on sale this week too so I can do a Cook Once, Eat 10 Times session for later.
In blog news, I'll be posting an update to my 2010 financial goals and others this week. And, iff you haven't yet, go enter my giveaway for Harry Potter and the Sorcerer's Stone, since it ends Wednesday. Here's our meal plan for this vacation week :
Monday–Super Easy Chicken Soup, homemade bread
Tuesday–Crockpot Chicken Cacciatore, spaghetti, salad
Wednesday–Pesto Ravioli, salad, green beans
Thursday–Crockpot Tacos (we never had these last weekend), fixings, black beans
Friday–Italian Spinach Pie, corn muffins, salad
Saturday–There should be leftovers from Thursday's tacos, so I'll make some quesadillas, rice, and beans.
