What an odd day! It was over 60 degrees, and there’s still two feet of snow on the ground. My kids are finally heading back to school tomorrow after being out 11 days straight (ugh!). Let’s hope for no more big snowstorms the rest of this winter. Please!
I had to look at the weather as much as the calendar when making this two-week menu plan. No one wants to eat soup on a 50-degree day, right? I’ve been trying to find time here and there to make casseroles to put in the freezer. It’s incredibly helpful when an evening is super busy to just take out a frozen meal and get it going. This is a strategy I use right before any busy month (not just September, but heading into the holidays and now again in February).
Moneywise Menu Plan – 1/17 to 1/30
Sunday: We ate out because oh my gosh we can finally leave the house after the blizzard.
Meatless Monday: Broccoli Mini Quiches with rosemary potatoes and fruit
Tuesday: Slow Cooker Moo Shu
Wednesday: Homemade Spaghetti Sauce and pasta, salad and cauliflower
Thursday: Slow Cooker Beef Stew and homemade rolls
Friday: Turkey Parmesan Pasta and broccoli
Saturday: Leftovers from the week
Sunday: Stroganoff-Style Chicken with egg noodles
Meatless Monday: Crustless Italian Spinach Pie and cornbread
Tuesday: Slow Cooker Pork Tacos, brown rice, black beans & toppings
Wednesday: We have a busy night out running around, so I’m just packing sandwiches.
Thursday: Ginger Chicken Soup
Friday: Pork Ragu & Fettuccine and asparagus
Saturday: Chicken Broccoli Rice Casserole
