Happy Valentine’s Day! I hope you’re doing something special with the ones you love today. We’re staying inside and warm (it’s 5 degrees out with the windchill) and having a low-key day while we all heal up. A nasty cold has taken all five of us out, one by one, with all three kids having their asthma triggered and taking turns on the nebulizer. No fun!
It’s weeks like this where I appreciate having a menu plan system in place. At least for the first part of the week, when it was just one kid and me down for the count, there was food in the house and my husband and 2 healthy kids could keep up with making easy meals. By the end of the week, we were all miserable and desperate. It was pitiful. I’m looking forward to a healthier week ahead!

Meatless Monday: Macaroni & Cheese Casserole and salad
Tuesday: Easy Baked Pesto Chicken from Kalyn’s Kitchen, brown rice and cauliflower
Wednesday: Sausage & Veggie Roast and salad
Thursday: Slow Cooker Chicken Parmesan from The Recipe Critic, spaghetti and broccoli
Friday: Super Easy Chicken Soup and homemade bread
Saturday: Homemade Pizza & Movie Night (we’re re-watching Ant-Man)
Sunday: Herb Roasted Pork, baked potatoes and brussels sprouts
Meatless Monday: Corn & Potato Chowder and salad
Tuesday: Slow Cooker Pork Tacos, brown rice, black beans & toppings
Wednesday: Spinach Stuffed Shells and salad
Thursday: Slow Cooker Chicken Tortilla Soup (using leftovers from Tues) and cornbread
Friday: Leftovers night
Saturday: Slow Cooker Beef Gyros from Six Sisters’ Stuff
