Now that we finally have the fall weather that actually goes with the season (as opposed to the 85-90 degrees we had two weeks ago), we're thoroughly enjoying some fall-flavored meals. Fall soups, in particular, are a favorite of my whole family, and I love that they can be prepped ahead of time (over the weekend, in the morning, or in the slow cooker all day). If you have a hectic evening, perhaps where everyone's eating at different times because of sports or other activities, give soup a try. It's easy to keep warm so everyone gets some, and the leftovers are great for lunch the next day, when the flavors have melded even more.
Each fall, the kids can I try to find a few new fall soups to try, so we don't get tired of the same ones. You'll see a few of those on this two-week menu plan.
