Now that we finally have the fall weather that actually goes with the season (as opposed to the 85-90 degrees we had two weeks ago), we’re thoroughly enjoying some fall-flavored meals. Fall soups, in particular, are a favorite of my whole family, and I love that they can be prepped ahead of time (over the weekend, in the morning, or in the slow cooker all day). If you have a hectic evening, perhaps where everyone’s eating at different times because of sports or other activities, give soup a try. It’s easy to keep warm so everyone gets some, and the leftovers are great for lunch the next day, when the flavors have melded even more.
Each fall, the kids can I try to find a few new fall soups to try, so we don’t get tired of the same ones. You’ll see a few of those on this two-week menu plan.
Moneywise Menu Plan – 10/11 to 10/24
Sunday: Spaghetti and meatballs, broccoli
Meatless Monday: Corn and Potato Chowder with salad
Tuesday: Slow Cooker Pork Tacos, fixings, tortillas, black beans and brown rice
Wednesday: Turkey Parmesan Pasta and asparagus
Thursday: Slow Cooker Chicken Tortilla Soup (made with Tuesday’s leftovers) and cornbread
Friday: Pizza & Movie Night (we’re watching Star Wars–gotta get the girls caught up)
Saturday: We’re celebrating because my son is earning his Black Belt in Tae Kwon Do. We’ll have his favorites: shrimp, artichoke & spinach dip, and salad.
Sunday: Slow Cooker Honey Parmesan Pork Roast, baked potatoes and broccoli
Meatless Monday: Macaroni and Cheese Casserole with broccoli and salad
Tuesday: Ground beef tacos with shells, fixings, black beans and brown rice
Wednesday: Creamy Chicken Noodle Soup from BHG
Thursday: Sausage and Lentil Soup with garlic bread
Friday: Leftovers night
Saturday: Broccoli Cheese Soup from Gimme Some Oven and garlic bread
As always, I’m using a couple of “theme” nights to make menu planning easier, like always eating vegetarian on Mondays and doing tacos every Tuesday (the kids count on it). What are some of your favorite fall soups?
