Since I went gluten-free in May, I have yet to tackle any real baking–anything other than a Trader Joe's GF Brownie Mix, that is. I also haven't wanted to invest my money or my time into all the new ingredients (xanthan gum, etc.) that I would need. But with the holidays approaching, I'm definitely wishing I could partake in some good old-fashioned yumminess, done my way (you know, easy!). This No-Fuss Gluten-Free Orange Cranberry Bread has hit the spot!
No Fuss Gluten-Free Orange-Cranberry Bread
2 cups Gluten-Free Biscuit & Baking Mix (there are many brands out there)
1/2 cup sugar
2 Tbsp. canola oil
1 cup orange juice
1 tsp. vanilla
3/4 cup dried cranberries
In a bowl, blend together the egg, sugar, vanilla and oil. Stir in the orange juice, then add the biscuit mix and cranberries. Mix until just combined. Scoop into a greased loaf pan and spread evenly (one of the kinks of baking GF is that the dough doesn't “settle” with a nice smooth top; it will be bumpy). Bake at 350 for 30-35 minutes.
Yes, you can make this with fresh cranberries, with orange zest, and with other ingredients that will make it incredible, but this bread is great just like this. It was gobbled up at a holiday party I went to last night, and no one realized it was gluten-free. Simple can be better…
