You can easily double this recipe for peppermint popcorn bark. When I make a double batch we have enough to give away and some to snack on at home.
There’s no extra work involved in making a double batch so it’s an easy option for quick, thoughtful gifts!
How to make peppermint popcorn bark:
- Line a cookie sheet with parchment paper or a silicone baking mat.
- Spread the popcorn in an even layer on the cookie sheet.
- Melt the chocolate in 25 second bursts in the microwave, stirring between each reheating until completely melted.
- Drizzle the melted chocolate on the popcorn.
- Repeat with the peppermint chips and then sprinkle on the broken peppermint candies while the chocolate is still wet.
- Let set/dry for up to 1 hour before serving or packaging.
- Makes 6 cups.
