My kids like a little novelty in their sandwich repetoire, so yesterday I made Turkey Pesto Rollups for their lunches. These rollups are so easy to do:
1) Lay out tortillas, I use small for my preschoolers and regular for my 2nd grader. Hey, it's Mickey Mouse!
2)Spread with pesto or a combination of pesto/mayo.
3) Lay turkey and other fillings (cheese, chopped tomatoes, lettuce) inside. We were out of tomatoes, so I chopped up some roasted red peppers.
4) Roll 'em up! I usually just cut them in half, but for the lunch above I sliced them into smaller bits. Unfortunately, I didn't cut them very evenly as they're all different heights in that photo above 🙂
Note: Whenever I put pesto or another bad-breath-inducing food into my son's lunch (like tuna), I like to include some palate cleaners (I hope his teacher appreciates it). Apples are a good one, and I suggest he eats them last. A little celery with ranch dip and some yogurt-covered raisins for dessert, and it's a delicious, healthy lunch.
