Vegetable Breakfast Casserole

Our easy vegetable breakfast casserole is a simple recipe you’ll use time and time again!  The prep time is quick, and you can use whatever vegetables your family enjoys.


•  Olive oil •  Mushrooms •  Bell peppers •  Eggs •  Milk •  Salt •  Pepper •  Cheddar cheese

Preheat the oven to 350 degrees. Prepare a 9x13 casserole dish with nonstick cooking spray.

Step 1

Heat olive oil in a skillet over medium heat. Add the bell peppers and mushrooms, cooking for 4-5 minutes. 

Step 2

In a large mixing bowl, beat the eggs with the milk, salt, and black pepper.
