Slow Cooker Chicken Enchiladas

These Slow Cooker Chicken Enchiladas are an easy Crockpot enchiladas recipe.  Everyone will love these tasty enchiladas made in the Crockpot.


boneless skinless chicken breasts, uncooked - Red Enchilada Sauce - garlic powder - cumin - corn tortillas  (flour tortillas do not work) - grated cheddar cheese, divided

Spray your slow cooker insert with nonstick spray or use a slow cooker liner.

Step 1

Put the chicken breasts in the bottom of the slow cooker and top with enchilada sauce.

Step 2

Cook on HIGH for 4 hours or LOW for 6-8 hours.

Step 3

Shred the chicken in the slow cooker insert.

Step 4

Cut the corn tortillas into strips and add them to chicken and sauce mixture.
