Tortellini Chickpea Pasta Salad

This Tortellini Chickpea Pasta Salad is an easy vegetarian meal that's filled with fresh flavors.


-  Cheese tortellini -  Red wine vinegar -  Juice of  1/2 lemon -  Garlic -  Dried oregano -  Salt and pepper -  Extra-virgin olive oil -  Cooked or canned     chickpeas -  Fresh spinach -  Grape tomatoes -  Carrots

Bring a large pot of salted water to a boil over high heat and cook the tortellini according the package directions.

Step 1

In a small jar or bowl, combine the vinegar, lemon juice, garlic, oregano, and salt and pepper to taste.

Step 2

In a large bowl, combine the tortellini, chickpeas, spinach, tomatoes, and carrots. Pour the dressing over the salad and toss gently to combine.
