Ingredients – Salmon Patties: – 14 oz salmon, cooked & flaked – 2 cups cold leftover mashed potatoes – ½ cup bread crumbs – 1 tablespoon dry dill – Salad greens for serving – Sauce: – 4 tablespoons dill mustard – 4 tablespoons dijon mustard – 2 tablespoons honey
Instructions 1. In a large bowl mix salmon, potatoes, bread crumbs, and dill until well combined.
2. Form 8 patties of equal size.
3. Prepare a skillet with nonstick spray.
4. Cook the cakes on medium high heat, about 3-4 minutes on each side.
5. Serve cakes over greens and drizzle on the sauce or serve on the side. 6. Enjoy! To make the sauce stir together both mustard varieties and honey until well combined.
