Homemade Apple Muffins

I love enjoying one with a cup of tea on a chilly fall morning.

Ingredients – 1 3/4 cups flour – 1/2 cup brown sugar – 2 tsp baking powder – 1/2 tsp cinnamon – 1 tsp vanilla – 1 cup applesauce – 1 egg, beaten – 1/4 cup canola oil – 1 granny smith apple, peeled and chopped (optional)                                                  

Instructions 1. Preheat oven to 400 degrees. Prepare a muffin pan with paper liners.

2. In a bowl, mix all dry ingredients until blended.

3. Add applesauce, egg, oil and vanilla. Stir just until moistened. Fold in chopped apples, if using.

4. Pour into muffin pan, and bake for 18-20 minutes or until toothpick inserted in center of muffin comes out clean.
