We got our first snow yesterday! It didn’t last long, as our temps here in the DC area have been unseasonably high, and the kids were disappointed again.

There is a possible “real” snowstorm on the forecast for next weekend, so we’ll see. In the meantime, we’re cooking our favorite soups and stews during these winter months.

One way I keep our menu plan out of a rut is by adding new sides, especially breads, to our rotation of favorite soups so there’s something new to try alongside an older recipe.

These Cheddar Cheese Biscuits get requested very often by my kids, and it’s the perfect accompaniment to chicken soup.

So a caveat: these are not light, flaky biscuits. They’re heavy, very buttery, and so decadent.

This recipe is the opposite of all the healthy food I usually share, but sometimes you just need comfort food. These biscuits are definitely in that category!

Our favorite soups

Cheddar Cheese Biscuits

Cheddar Cheese Biscuits
Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 2 cups flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/3 cup butter, cold and cut into chunks
  • 2 Tbsp canola or vegetable oil
  • 1 cup grated sharp cheddar cheese
  • 1/2 - 2/3 cup milk
  • For brushing on top:
  • 3 Tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley

Instructions

  • Preheat oven to 400 degrees.
  • Combine flour, baking powder, salt and garlic powder in large bowl.
  • Add the cubed butter. With a pastry cutter or fork, cut butter into flour until it is coarse and pea-sized.
  • Add oil, grated cheese and 1/2 cup of milk. Stir until well combined and the dough holds together.
  • Add a little milk if needed to moisten dough and be sure there is no dry flour.
  • Drop onto cookie sheet in approximately 1/4 cup portions.
  • Bake for 15-17 minutes or until toothpick inserted in center comes out clean.
  • While biscuits are baking, melt 3 Tbsp of butter and combine with garlic powder and parsley.
  • Remove biscuits from oven and brush tops with butter mixture.
