Cake Mix Cookies {Perfect for Potlucks}

There’s nothing easier than these cake mix cookies. We make them all the time when we’re in the mood to bake homemade cookies but don’t want to pull out all the ingredients!

There’s just three ingredients–unless you want to add some sprinkles to the top, then it’s four. These cookies are so soft and luscious, it’s like eating the top of a muffin.

This is a great “base” recipe that you can take in any direction. Change up the sprinkles for your favorite holiday or any theme. Try a different flavor cake mix. Or add mini chocolate chips, crushed Oreos or chopped nuts to the top.

  1. Heat oven to 350 degrees.
  2. Combine first three ingredients in a large bowl and stir until dough forms.
  3. Either scoop onto cookie sheet or shape into 1-inch balls (it’s easier if you chill it first).
  4. Bake 8-10 minutes or until center is set.
  5. Let cool on the pan for 1-2 minutes, then transfer cookies to wire racks to cool completely.

    These are so cute -- especially with the sprinkles! Have you made these with both butter and oil? I'm wondering which ones turn out like the cookies in the photo -- if I'm going to pass out cookies that are based on a boxed cake mix, I'd rather just use cheap canola oil than my precious grass fed butter or olive oil! :) The cookies look really good!

    I use canola oil (that's what I used for the ones in this photo shoot), but I know a lot of readers don't like canola and would want to use butter, so I listed it.
