What cuts of meat do I use for recipes using stew beef cubes in slow cookers?

When we talk about stew beef or beef cubes we're talking about stew beef, chuck roast that is cut into cubes, or sometimes the store will just label them “beef cubes”.

Usually these are chuck roast cuts that are already hacked up into chunks that are about 1-2 inches square. It's a great way to get uniform meat pieces that you don't have to handle too much before cooking.

That said, if you have large cuts of beef on hand and want to make your own you can do that! Use chuck roasts or round roasts. These are usually cheaper cuts of beef because they are tougher cuts of meat.

You can get them and cut them up yourself or you can get them already cut. Check the meat case or ask the butcher for stew beef or stew cubes!

We will be using stew meat, yellow onions, garlic cloves, ginger, red curry paste, red chili flakes, diced tomatoes, cinnamon, za'tar seasoning blend, coriander, and some Naan bread for serving on the side!

There are a few things here you will probably have to grab online or at the grocery store since they probably are not in your general spices collection. It's worth it! Once you give this recipe a try you will definitely want to make it again!

We love to make this one year round but it's really indulgent and delicious when the weather gets cool. It's spicy enough to add a little heat to any chilly fall evening!

How to make slow cooker beef chunks with plenty of flavor:

You are going to be so thrilled with the prep on this one. Making slow cooker beef cubes with Indian seasonings is super easy thanks to the Crockpot.

The Crockpot is necessary here. The slow cooking process helps to make the beef chunks tender and flavorful. Since we are using cheap and sort of tough cuts of beef the slow cooker really breaks it down and makes those cuts of meat into something much more delicious.

In a large bowl combine onion, garlic, ginger, chili flakes, curry paste, tomatoes, cinnamon, za’atar, and coriander until well combined 

all the ingredients in a bowl ready to be mixed.

Add in stew meat and toss until completely coated

Cover and cook on low 5-6 hours

Ingredients

  • 2 lbs beef stew meat
  • 1 small yellow onion, sliced thin
  • 2 cloves garlic, minced
  • 2 tablespoons ginger, minced
  • Pinch red chili flakes
  • ¼ cup red curry paste
  • 1 can diced tomatoes
  • 1 teaspoon cinnamon
  • 1 teaspoon za’atar seasoning blend
  • 1 teaspoon coriander
  • Naan bread for serving

Instructions

  1. In a large bowl combine onion, garlic, ginger, chili flakes, curry paste, tomatoes, cinnamon, za’atar, and coriander until well combined 
  2. Add in stew meat and toss until completely coated 
  3. Spoon into slow cooker 
  4. Cover and cook on low 5-6 hours
