Stew meat is typically cuts of beef that are usually tougher and need more time to cook until they become tender and tasty.
Stewing is a way of cooking where the meat is gently simmered in liquid, often with vegetables and seasonings (in this case–beans, chiles and tomatoes).
Cooking long and slow in a crock pot gradually softens the tough parts of the meat by breaking down their fibers. It also lets the flavors mix together nicely, making the chili even tastier.

This recipe is so easy because it uses a few convenience products (like the can of tomatoes that already has green chiles and spices).
- stew beef cubes (I usually cut the large cubes into bite-sized pieces)
- canned chili beans with sauce
- canned chipotle sauce
- Rotel tomatoes
- Shredded cheese (for topping before serving)
How easy is this recipe for chili with beef chunks?
I just love recipes like this! Open the three cans, and add each to the crock.
If the stew beef has particularly large pieces, use a kitchen scissors to snip them into bite-sized pieces.
Add the stew beef to the crock, and stir to submerge the meat while combining the ingredients.
Cover and cook on Low for 5-6 hours. Serve with shredded cheese on top. That’s it!
What goes well with stew meat chili?
If you like to garnish your chili (and who doesn’t?), put out some sour cream, shredded cheddar cheese and sliced avocado. All are delicious on top of this chili recipe.

Slow Cooker Stew Meat Chili
This easy 5-ingredient chili uses stew beef and a few cans from the pantry to make a hearty meal.
Ingredients
- 2 - 2 ½ lbs stew beef
- 2 - 15 oz cans chili beans with sauce
- 10 oz can Ro-tel tomatoes, not drained
- 7 oz can chipotle sauce
- cheese for garnish, optional
Instructions
- Add beans, tomatoes, chipotle sauce to crock. Stir until well combined.
- Add stew meat (see note about size) and stir again to submerge the beef.
- Cover and cook on Low 5-6 hours.
- Garnish with shredded cheese.
Notes
If your package of stew meat contains very large pieces, use a kitchen scissors to quickly snip them into bite-sized pieces before adding to the crock.
