Chili makes a great weeknight dinner for so many reasons! First, you typically cook it in a slow cooker, so you can set it up and walk away rather than stand at the stove.

Since it simmers all day, you can’t really overcook it–so don’t worry about what time everyone sits down to dinner. For my busy family, that is handy because some of us eat earlier than others. I can just leave the crock pot on Warm for the second set of eaters.

This chili with beef chunks in the slow cooker is an especially easy recipe because 3 of the ingredients are cans. Super simple!

What is stew meat?

Stew meat is typically cuts of beef that are usually tougher and need more time to cook until they become tender and tasty.

Stewing is a way of cooking where the meat is gently simmered in liquid, often with vegetables and seasonings (in this case–beans, chiles and tomatoes).

Cooking long and slow in a crock pot gradually softens the tough parts of the meat by breaking down their fibers. It also lets the flavors mix together nicely, making the chili even tastier.

That’s why you’ll see beef chunks or beef cubes used in slow cooker stew recipes or other meals that use the crock pot, like our beef cubes with Indian spices.
