When it comes to making slow cooker soup recipes I get a little excited…it’s just so nice to have the Crockpot doing the work of making dinner while I’m off tending to other things.

This recipe is made using dry beans but don’t let that scare you off. It’s still incredibly easy to prepare and it makes for a much more delicious final product.

What is in this slow cooker bean soup recipe?

My vegetarian bean soup recipe uses some pretty simple and standard ingredients for bean soup. We’ll need dry white beans, onion and garlic. We will be using celery, carrots, a lemon, some vegetable stock and salt / pepper to taste.

You probably have some if not all of those ingredients on hand in the refrigerator or pantry right now! If so you should gather them up and prepare this recipe, everyone will love it and it makes for excellent leftovers.

Is this recipe vegetarian bean soup?

This bean soup is vegetarian! A lot of bean soup recipes use ham to flavor the beans and therefore removes them from the vegetarian category but I love to make this recipe using vegetables and vegetable stock for flavoring.

If you wanted to add ham to the recipe it certainly wouldn’t hurt it but it doesn’t need it. The flavors are great and you can add other veggies / seasonings if you liked as well.

This Crockpot bean soup recipe is also technically vegan so if you are looking for slow cooker vegan recipes it’s worth a try as well! I might be a little biased but I can’t think of a reason for you to NOT try this one.

How to make Crockpot bean soup:

Soak beans in water overnight

Drain and place in slow cooker 

Add in onion, garlic, carrot, celery, and stock – stir until well combined

Cook on low 8 hours 

In the last 5 minutes stir in lemon zest and juice

It’s necessary to soak the beans in water overnight. Don’t skip this step or they’ll be crunchy and not fully cooked when you go to eat your soup.

Soaking beans is really not a difficult process and it allows you to use dry beans which are lower in sodium and much less expensive. They’re also really easy to keep on hand because they store really well and for a long time!

  • 8 oz dry white beans - soaked overnight
  • ½ onion, diced
  • 3 teaspoons garlic, minced
