Can I use noodles instead of rice?

You probably could swap out the rice for noodles if that is your preference. I would cook them and then add them at the end of cooking just to let them get absorbed and flavorful.

Egg noodles would work as would just about any other regular pasta, just cook it in advance before adding to the soup at the end.
