When it comes to cookies there’s really no wrong way to do it…but these almond butter cookies are among my favorites. They’re safe for those with peanut allergies but they’re also great for anyone avoiding gluten!
These cookies have the same texture and taste as my simple peanut butter cookies but without the peanuts!
What do I need to make flourless almond butter cookies?
Hint…you won’t be needing any flour for this delicious almond butter cookies recipe!

This is a small batch of cookies, just a dozen from these ingredients so you can definitely make a batch and not have to worry about having tons. During the holidays we are sharing baked goods like crazy but I try and keep my recipes manageable so that they can be enjoyed year round!
For this recipe you’ll need the following ingredients:
- Eggs
- Almond Butter
- Brown Sugar
- Baking Soda
- Vanilla Extract
You can also add in some chocolate chips or mini chocolate chips if you want a peanut butter chocolate extravaganza with no extra work!
How to make gluten free almond butter cookies:
The great news about these almond butter cookies is that they are naturally gluten free! There is no flour in this recipe as you may have noticed in the list of ingredients above.
That means that you can feel good serving these up to anyone who can’t have gluten and also those with peanut allergies! Be sure to check that your other ingredients are processed safely if there is a concern for allergies!
Preheat oven to 350 degrees, and prepare two baking sheets.
Using parchment paper makes it easier to clean afterwards.In a medium bowl, beat the egg.
Add the almond butter and brown sugar, and mix well.Sprinkle the baking soda and vanilla in, and mix well again.
If using chocolate chips, fold them in now!
Scoop about 2 Tbsp dough and use your hands to make a ball.
After placing each ball on the baking sheet, use a fork to press down and get the “criss-cross.”
See note below about extra sugar.
Bake for 12 minutes. Let cookies complete baking on cookie sheets for 10 minutes before removing to cooling rack.
How to get the perfect criss cross marks on your cookies:
This is a really simple trick! You’ll find that it’s much easier to make these little criss cross marks with your fork if it’s not sticky!
After each cookie, dip your fork into some sugar so that the dough doesn’t stick to the prongs of your fork and your cookie will get a little extra sprinkling of sugar on the top!

Almond Butter Cookies

Notes
Typically, peanut butter cookies are made by rolling each dough ball in white sugar before pressing with fork tines. This gives a nice sparkle and texture to the cookies. I opted not to add more sugar to this recipe.
