Here is what you will need to make chocolate chip walnut cookies:

  • vegetable shortening
  • unsalted butter
  • granulated sugar
  • brown sugar, packed
  • eggs
  • vanilla extract
  • all-purpose flour
  • baking powder
  • baking soda
  • salt
  • chocolate chips
  • 3-oz. dark chocolate bar (or ¾ cup semi-sweet chocolate chips)
  • chopped walnuts

I like to use the chocolate chunks for this recipe. They add a little bit more of a chocolatey bite and with the larger walnut chunks it balances out a little more!

If you don’t like walnuts or can’t have them you can always substitute another type of nut. I think the walnuts go great in this recipe but feel free to change it up to find your own favorite combo! Macadamia nuts would also be good!

How to make these easy homemade cookies:

  1. Preheat the oven to 375°F and line a large, rimmed baking sheet with parchment paper or a Silpat® baking mat. Set aside. 
  2. Cream shortening and butter with granulated and brown sugars in a large mixing bowl. Mix in eggs and vanilla extract until well blended.
  3. Add in flour, baking powder, baking soda, and salt. Mix to combine.
  4. Fold in chocolate chips, chopped chocolate and walnuts until thoroughly combined.
  5. Use a large cookie dough scoop to make 24 balls of dough. Place 6 balls of dough on the prepared baking sheet with 1-2 inches in between each ball. Flatten dough with the bottom of a glass.
  6. Place in preheated oven and bake 10-12 minutes or until golden brown and cooked through. Remove from oven and cool slightly before serving. Enjoy!

Keep an eye on the cookies and don’t over bake them! They can continue to bake on the sheets after they come out of the oven, once they’re over baked…it’s too late so to speak.

If you don’t have silicone baking mats you can use parchment paper but they’re worth the investment in my opinion. It helps to keep the cookies from getting too flat and melted! These baking mats also work great for keeping things from sticking!

They’re so multipurpose you’ll find plenty of ways to use them in the kitchen. It’s not just cookies, they work great for baking everything from chicken tenders to fish!
