My chicken chili in the slow cooker is always a hit. It’s simple to make and perfect for the fall and winter when we want warm and hearty meals for lunches and dinners to warm us up. Keep easy chicken slow cooker recipes like this on hand.

When it comes to the Crockpot there’s very little you can’t make. The slow cooker can do everything from breakfast casseroles to desserts and bread recipes. It’s wild when you think about it!

Today we are going to make a favorite of mine. This white chicken chili is a bit lighter in flavor and calories than a traditional chili. We are using chicken and white beans. It’s also has the classic kick of spice that you’d expect from chili so no worries there!

You can easily control the level of spice, so if you avoid spicy recipes you can adjust the level of heat by cutting back or adding more spices and peppers. It will depend what you like. This recipe as written is pretty middle of the road. It’s not super spicy but has enough flavor and heat to let you know you are eating chili and not just some chicken soup.

What do I need to make slow cooker chicken chili with white beans?

Well the title gives away a lot here… apart from chicken and white beans you will also need navy beans, cannellini beans, yellow onion, jalapeno peppers, garlic, chili seasoning, salt, pepper, and chicken broth!

It’s a pretty standard list of ingredients which should be easy to find and keep on hand. We usually keep most of these things in the pantry or in the freezer / refrigerator so that when the craving strikes I can whip up a batch of this delicious chicken chili in the slow cooker.

Why make chili in the Crockpot?

The great thing about making chili in the Crockpot is that all the flavors have time to simmer together. When making chili it’s important that there is plenty of time (low heat and long cooking time) for the beans to soak up all those flavors.

In this case the same is true for the chicken. It will get more flavorful the longer it cooks. The slow cooker is the perfect tool for making delicious chili recipes since it does this hard work for us without being monitored.

When you make chili on the stovetop you have to monitor it and stir it, keep it from burning, etc. The Crockpot takes away that need for hovering around in the kitchen so you can focus on other things!

How to make this chicken chili in slow cooker form:

Add the chicken to the crockpot.

Open and drain the cans of beans, then pour into the crockpot.

Peel and chop the onion, then add to the crockpot.

Rinse the jalapenos, the slice in half, remove and discard seeds. Chop jalapenos and add to the crockpot.

Peel the outer layer off garlic cloves and mince, then add to the crockpot.

Add chili seasoning, salt and pepper to the crockpot.

Pour chicken broth into the crockpot, and stir for 30 seconds.

Cook on high for 4 hours or low for 6-8 hours.

Remove chicken from the crockpot and shred into chunks. Return chicken to the crockpot, stir and serve with sour cream and/or tortilla strips if desired.

Ingredients

  • 1.5 lbs boneless skinless chicken breasts (about 2 chicken breasts)
  • 2 - 15.5oz cans navy beans
  • 1 - 15.5oz can cannellini beans
  • 1 medium yellow onion, chopped
  • 2 medium jalapeno peppers, chopped
  • 2 cloves of garlic, minced
  • 1.25 oz chili seasoning
  • 1 tsp salt
  • 1 tsp pepper
  • 32 oz chicken broth

Instructions

  1. Add the chicken to the crockpot.
  2. Open and drain the cans of beans, then pour into the crockpot.
  3. Peel and chop the onion, then add to the crockpot.
