  • ¼ cup butter
  • 1 lb baby portobello mushrooms, chopped
  • 4 celery stalks, chopped
  • 1 onion, chopped
  • 12 cups seasoned stuffing cubes
  • ¼ cup parsley
  • 1 ½ teaspoons sage
  • 1 teaspoon salt
  • 1 teaspoons thyme
  • ½ teaspoon pepper
  • 2 eggs, beaten
  • 3 cups vegetable broth
