Bite-size pinwheels make a pretty appetizer, but they can also serve as an afterschool snack or fun lunchtime alternative to regular sandwiches. My teens love making (and eating) tortilla pinwheels.
Most pinwheel recipes use cream cheese, but these use hummus as the spread that holds the meat and vegetables to the tortilla.

Ingredients for turkey hummus pinwheels
This is another of our super-easy 5-ingredient pinwheel appetizers. And it’s such a versatile recipe that you can trade out ingredients if you’d like.
For example, replace plain hummus with a flavored one like garlic. Or save a little prep time by using an English cucumber, which does not need to be peeled. Just dice it very small.

What are sun-dried tomatoes?
Sun-dried tomatoes are ripe tomatoes that have been sliced and dried in the sun or by using a dehydrator until they have lost most of their moisture.
This results in a chewy, shriveled tomato with an intense, sweet flavor. They can be found in various forms, such as packed in oil or dried in bags.
For this recipe, be sure to choose the dried, bagged version. Too much moisture makes pinwheel appetizers soggy.
How to make these simple hummus pinwheels
Start by dicing the cucumber into small bite-sized pieces. Spread hummus to the edges of each tortilla.
Layer 4 slices of deli turkey on each tortilla. Sprinkle sun-dried tomatoes evenly across each tortilla.
Tightly roll each tortilla, and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour. This makes them easier to slice.
Unwrap each roll. Use a serrated knife to slice into 1-inch pieces. You can either discard the ends or snack on them (that’s what I do!).
Lay each pinwheel flat on a platter to serve.
Pinwheel storage tips:
Turkey hummus pinwheels are so quick to make, but they don’t store for very long. You can prep them up to 24 hours ahead of serving, but be sure to keep them refrigerated.
We don’t typically have leftovers, but if you do, store them in an airtight container but plan to eat them quickly. They will get soggy quickly.

Turkey Hummus Pinwheels

Ingredients
- 4 large flour tortillas
- 10 oz hummus
- 16 slices of turkey lunch meat
- 3 oz sun dried tomatoes
- 1 cucumber
Instructions
- Peel cucumber, and dice into small pieces.
- Spread ¼ of the hummus on each tortilla.
- Arrange 4 slices of turkey on each tortilla.
- Arrange ¼ of the sun dried tomatoes, and a ¼ of the diced cucumber onto each tortilla.
- Start at one end of the tortilla, and tightly roll until you meet the other end.
- Wrap each rolled tortilla in plastic wrap.
- Refrigerate for 1 hour, or until ready to serve.
- Using a serrated knife, cut the tortillas into one inch pieces, discarding (or eating) the ends.
- Arrange on a platter to serve.

Great recipe - I have a question about sun dried tomatoes being a little too tough. ?
Love this super easy recipe. Fun to make it! I have a neighborhood outdoor event to bring appetizer. I love this turkey hummus pinwheel appetizer! . I made for my test batch to try it. It’s delicious and easy.
I have one problem I’m finding, I am not that familiar with sun dried tomatoes .. flavorful but seem a little overly tough to chew! I got the Juliann cut 3 oz pkg ..nice quality at grocery. should I maybe cut/trim a little thinner tailor them a little? A friend advised maybe I cd pour boiling water on them paper towel after to make them less tough ? I don’t think so. This recipe is so fun I want to make it all the time. Vary it etc. Please advise. !

Hi Dottie! If you chop the sun dried tomatoes small, they shouldn't be tough to chew. You could always use real tomatoes, but then everything will be wetter (not ideal for pinwheel appetizers).
