Why I love this tilapia bok choy recipe

This easy baked tilapia in foil is my favorite way to bake tilapia. I have a bad habit of overcooking fish, but wrapping it a foil packet lets it steam to the perfect texture.

If you haven’t started giving your kids fish yet, tilapia is a good first fish. It’s such a mild flavor, and there are no bones to worry about.

We often eat tilapia because it’s such an inexpensive protein, and with two adults and three toddlers, 1 pound feeds us all.

I make this tilapia and bok choy recipe with cooked brown rice, but you can easily use white rice. It’s basically a complete meal all in one: fish, grain, & veggie. Sometimes I serve chilled mandarin oranges for dessert.

It’s also nice that this Asian Fish recipe is naturally gluten-free, as long as you use GF soy sauce.

Ingredients

• 1 lb tilapia fillets (typically 4 servings)
• 1 cup cooked rice [I use brown]
• 2 cups chopped bok choy
• 2 scallions, chopped
• 1 Tbsp vegetable oil
• 1 tsp grated fresh ginger root
• 1 clove garlic, minced
• 2 Tbsp soy sauce
• 2 tsp sesame oil

Instructions

1. Preheat oven to 450F.
2. Rinse fish, cook rice, and chop vegetables.
3. On each foil square, spread half of the rice. Layer the bok choy, fish, and scallions on the rice.
4. In a bowl, mix the sauce ingredients. Pour sauce over the fish.
5. Fold up the foil packets and bake 20-25 minutes.
