As adults we can see the value in eating fish and especially salmon, right? That's not always the case with kids…and it is understandable. But if you are looking for a great recipe to help your kids love salmon, this is the one to try! It's flavorful, not overly “fishy” and you can serve it with a salad, veggies, or whatever they really like at dinner time.
This salmon also goes great the next day as leftovers for lunch!!
What do I need to make balsamic salmon at home?
Salmon is so easy to make! I buy frozen individually-packaged fillets so I can have them on hand. Then, it's easy to defrost them in the fridge before cooking.
There are plenty of simple ways to prepare salmon, but I love this one because it doesn't use any butter. I've been eating healthier, and this way there's no extra fat and calories from butter. Salmon is such a great source of protein, and it also has omega-3 fatty acids.
I use a grill pan on my electric stove, but you can also bake salmon very quickly. If you're baking, plan on about 12-15 minutes at 400 degrees.
How to make this delicious salmon recipe:
For this simple recipe, marinate the salmon in balsamic vinaigrette dressing for at least 15 minutes. You can also let the fish defrost in the marinade while it's in the fridge.
I use my Homemade Balsamic Vinaigrette Dressing recipe. When you make your own, you avoid the extra sugar and preservatives over store-bought. It tastes so fresh!
After grilling the salmon, be sure to discard the marinade. Use fresh dressing to top your salad, or serve it alongside your family's favorite side dishes, like Roasted Brussels Sprouts.
Another easy way to serve this salmon is alongside fresh or steamed vegetables. During the summer months we just grab whatever is looking especially good at the farmers market for a quick and simple dinner recipe that is healthy, tasty, and perfect for weeknights!
