Want delicious crispy chicken without the oil and frying? It is possible! This Crispy Honey Chicken recipe was adapted from a recipe in the Meal Makeover Moms cookbook I picked up at the library.

I loved dipping the chicken in a flavorful sauce instead of milk, egg or oil before adding the coating. It’s just delicious!

By baking instead of frying, you avoid the mess and all the greasy calories.

These drumsticks are very sticky, so line your pan with foil and be prepared to let the kids lick their fingers.

How to Make Crispy Honey Chicken

What ingredients do you need for this chicken recipe?

  • rice cereal like Rice Krispies or Chex 
  • chopped almonds
  • honey
  • low sodium teriyaki sauce
  • about 3 lbs chicken drumsticks, skinned
  • salt and pepper

How do you make crispy honey chicken?

In a bowl, crush the rice cereal coarsely. You can also put it into a zipper bag and crush to better contain the crumbs.

Add the chopped nuts to the rice cereal, and set aside. In another bowl, combine the honey and teriyaki sauce.

Season the chicken with the salt and pepper. Then dip each drumstick in the honey mixture and coat with the rice cereal/nut mixture.

Line a baking sheet with foil, then lay coated chicken on it. Bake about 30 minutes at 425 degrees, or until the internal temperature reaches 165 degrees.

Is this gluten-free crispy honey chicken?

It can be! I made this recipe with gluten-free rice cereal so that I could avoid breadcrumbs. I found that gluten-free breadcrumbs were so expensive. We preferred the crunch from Rice Chex!

Be sure and check your bottled teriyaki sauce to be sure it is also gluten free.

Ingredients

  • 2 cups rice cereal (like Krispies or Chex)
  • 1/2 cup almonds, finely chopped (the original recipe called for pecans)
  • 3 Tbsp honey
  • 2 Tbsp light Teriyaki sauce
  • 12 chicken drumsticks, skinned (about 3 lbs)
  • salt and pepper

Instructions

  • Preheat the oven to 425 degrees.
  • In a bowl (or in a zipper bag), crush the rice cereal coarsely. Add the nuts and set aside
  • Combine the honey and teriyaki sauce in a large bowl.
  • Season the chicken with salt and pepper, then place each drumstick in the honey mixture and toss to coat.
  • One at a time, roll each drumstick in the cereal mixture until well coated.
  • Place chicken on a foil-lined baking sheet and cook until the meat reaches 165 degrees with meat thermometer and coating turns golden brown, about 30 minutes.
