It’s that time of year when I need easy recipes for lunches and dinner and I’m also planning ahead for parties, backyard BBQ’s and more!

This tuna, green bean, and potato salad is a delicious one step kind of meal. It goes great as a side dish but can also be served up as a main dish as well.

This Tuna, Green Bean and Potato Salad is SO easy to put together and is the perfect recipe to use fresh green beans and parsley from your garden this summer.

What kind of dressing is on this salad? 

The homemade dressing adds a light lemon flavor that brightens the whole meal. It makes it taste like a fresh and delicious summer salad that you can enjoy all year round. 

Can I meal prep with this potato salad recipe? 

Yes! This is a great recipe to prep in advance. It’s best to prep this salad ahead of time so the flavors can meld. Then the potatoes have time to soak up the delicious dressing! After a day or overnight in the fridge this salad really comes together and everything blends a little better for the best final product.

Do I serve this salad recipe hot or cold? 

As for serving, it’s delicious warm, but we also like it chilled the next day for lunch or packed ahead as an on-the-go dinner. So the choice is yours! You can serve this up right after cooking as a warm dinner recipe or you can let it chill overnight and then eat it without reheating. Of course it’s always there to reheat for a quick dinner recipe as well. 

What ingredients do I need to make tuna, green bean, & potato salad? 

Here are the ingredients you need to make this tasty salad recipe. It’s easy to pull together and you can always use vegetables and herbs right from the garden. 

Salad:

  • fresh green beans
  • gold or red potatoes
  • canned tuna in water
  • celery
  • sliced black olives

Dressing:

  • fresh basil
  • fresh parsley leaves
  • olive oil
  • lemon juice
  • garlic
  • salt and pepper

How do I make this delicious tuna green bean potato salad? 

  1. Cook green beans in boiling salted water for about 5 minutes, until tender-crisp. Remove with slotted spoon, and rinse under cold water to stop the cooking. Set aside.
  2. Add potatoes to the same pot of water and return to a boil. Cook for 15-20 minutes, until tender but firm. Drain, then rinse under cold water to stop the cooking.
  3. In a small bowl, whisk together olive oil and lemon juice. Then add garlic, salt and pepper.
  4. In a large bowl, gently combine basil and parsley with the potatoes, green beans, tuna, celery, olives and dressing.
  5. Set salad aside at room temperature for 10 minutes before serving, so flavors meld.

Ingredients

  • 2 cups fresh green beans, trimmed and halved
  • 2 lbs small gold or red potatoes
  • 2 cans (each 4oz) tuna in water, drained and broken into chunks
  • 1 stalk celery, diced
  • 1/2 cup sliced black olives
  • Dressing:
  • 2 Tbsp chopped basil
  • 1 Tbsp chopped parsley leaves
  • 1/4 cup olive oil
  • 2 Tbsp lemon juice
  • 1 minced garlic clove
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions
