If you've never liked asparagus…

I encourage you to try this recipe for roasted asparagus with balsamic vinegar. Just like with Brussels sprouts, the way you cook asparagus can cause it to turn bitter. And don't mention the limp, gross texture when it is overcooked!

Roasting is the way to go! And for good measure, serve your asparagus with feta cheese. The tang of the cheese and the balsamic vinegar are a great contrast to the earthy flavor of asparagus.

Balsamic Roasted Asparagus

Balsamic Roasted Asparagus

Balsamic Roasted Asparagus has a crisp texture and layers of flavor. It's an easy side dish for your holiday table!

Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1 lb fresh asparagus, tough ends trimmed
  • 2 garlic cloves, minced
  • 1 Tbsp balsamic vinegar
  • 2 tsp olive oil
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup crumbled feta cheese

Instructions

  • Preheat oven to 450 degrees.
  • Lay asparagus in single layer on cookie sheet.
  • In a small bowl, combine garlic, vinegar and olive oil. Sprinkle over asparagus, and roll asparagus in liquid to coat.
  • Season asparagus with pepper and salt.
  • Roast for 10-13 minutes or just until tender.
  • Remove from oven and sprinkle with feta cheese.
