Maple and Brown Sugar Muffins

Do I make these full-sized muffins or mini muffins?

I make these tasty little muffins using a standard mini muffin pan. This recipe will make around 36.

If you prefer regular-sized muffins, this recipe yields 12 full sized muffins that you can make in a cupcake pan.

It's easy to make these muffins with liners or without. You can spray your pans or use paper liners if you want, either way they'll come out fine.

What can I add to these maple brown sugar muffins?

These Brown Sugar and Maple Muffins come out of the oven with a slightly-crisp edge that's just divine.

They would be great with some chopped pecans added as well, but we have to avoid nuts in my house.

You don't need to change the bake time when you add chopped nuts or even raisins.

Can I use regular flour for this easy muffin recipe?

I bake with wheat flour because I want my family to get the fiber. That being said, it's not necessary for the recipe to work.

Go ahead and substitute white flour if you prefer or if that's all you have on hand. They'll still come out great and the whole family will love them.

What do I need to make these brown sugar maple muffins:

  • 2 cups wheat flour
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup milk
  • 1/2 cup butter, melted
  • 1/2 cup maple syrup
  • 1/4 cup plain yogurt (I used Greek)
  • 1 egg
  • 1/2 tsp vanilla extract

 

How to make my favorite brown sugar and maple muffins:

  1. Preheat oven to 400 degrees.
  2. Combine flour, brown sugar, baking powder and salt. In a separate bowl, combine milk, butter, syrup, yogurt, egg and vanilla.
  3. Stir wet ingredients into dry ingredients, just until moistened.
  4. Prepare muffin tin with nonstick cooking spray or paper liners. Recipe will make 48 mini-muffins or 12 regular-sized muffins.
  5. Bake at 400 degrees; 11-13 minutes for mini-muffins or 16-20 minutes for regular-sized.
  6. Cool for 5 minutes before removing from pans.
