Easy Garlic Green Bean Recipe With Tomatoes

Today I'm sharing a delicious side dish recipe that is perfect for pairing with just about any protein. Serve this garlic green bean recipe up with honey chicken, your favorite grilled chicken, beef, or pork chops. If you grow tomatoes or green beans in your garden this is a must try recipe with fresh ingredients! 

Here's the thing, I love simple recipes like this one because they save time and money. This is a budget friendly side dish that requires just a few fresh ingredients and some items from your pantry.

 

What you'll need to make this garlic green bean and tomatoes recipe:

  • 1 pound green beans, washed and trimmed
  • 1 tablespoon olive oil
  • 4 to 5 cloves garlic, peeled and chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pint cherry or grape tomatoes, halved

 

How many does this recipe serve? 

This recipe serves 4-6 depending on how you portion them up. You can easily double this recipe if you are serving a crowd. Just make sure to watch the cooking time as it may take a little longer for these to get tender in a double batch.

How to make garlic green beans with tomatoes: 

  1. Preheat oven to 400 degrees. Prepare a large baking sheet with aluminum foil for easier clean up.
  2. Place green beans on baking sheet and drizzle with olive oil. Add garlic and seasonings. Toss well.
  3. Bake for 8 to 10 minutes. Remove from oven and carefully toss with tomatoes. Return to oven and bake an additional 10 to 15 minutes until green beans reach desired tenderness.

 

Can I grill this recipe instead of baking it? 

You definitely can! We have a grill basket for grilling vegetables and it's so nice for stuff like this. These garlic green beans and tomatoes are great on the grill over low heat. They'll take a little longer to get tender but it's a nice addition to the flavors. 

 

Are these garlic green beans good for meal prep? 

They are a great choice for meal prep. The nice thing about making any kind of green bean recipe is that they are a sturdy veggie when you are making them fresh. They won't get soggy and flat in the fridge over a few days so you can easily prep these in advance to include in lunches or with quick dinner recipes throughout the week.

What's the best way to peel and chop garlic?

Fresh garlic is one of those crazy things that just always seems to make life difficult in the kitchen. Here are my best tips for making the peeling and chopping easier: 

  • Peel the outer papery skin away and separate the cloves. 
  • Peel the cloves themselves as well. 
  • The best place to start is by slicing the clove in half so you have a nice flat surface to chop from. 
  • Now you can cut to desired thickness and chop! 
  • The more finely chopped the garlic the more flavor it will impart to your dishes.
