Refrigerate for at least 2 hours or until semi-firm.

Mixing chocolate for holiday truffles

Scoop about 1½ Tablespoon chocolate mixture and roll into a ball. I find it easier to use a small scoop so the truffles come out the same size.

Place on a baking sheet lined with parchment paper. Repeat until you run out of mixture.

Storage tips for homemade truffles

Since a main ingredient in this candy is cream, you have to be careful to store homemade truffles correctly. If you plan to eat them within two weeks, keep them refrigerated in an airtight container.

If they won’t be eaten that quickly, or you’re preparing them ahead of a party, place them into a zipper freezer bag and store in the freezer. They’ll last up to three months that way.
