Absolutely. I think all of these flavors work really well together but I understand that not everyone likes the same things! If you really dislike mushrooms you can leave them out and just make this as a spinach and ham crustless quiche.

What do I need to make this easy spinach and ham quiche? 

  • Butter
  • Onion
  • Mushrooms
  • Salt
  • Black Pepper
  • Ham
  • Fresh Spinach
  • Colby Jack Cheese
  • Eggs

How to make a spinach mushroom & ham quiche: 

  1. Preheat oven to 350 degrees. Spritz a 9 inch baking dish with non-stick cooking spray.
  2. In a large skillet, melt butter over medium-high heat. Add onion and mushrooms. Cook until tender, about 3 to 5 minutes.
  3. Add ham and spinach to skillet and heat through. Transfer to baking dish.
  4. In a mixing bowl, whisk eggs. Pour eggs over ham and gently move ham and vegetables until the egg mixture is evenly distributed. Pat the quiche flat.
  5. Bake for 45 minutes or until the eggs are completely set.
  6. Allow quiche to rest for 5 minutes before slicing and serving.

Ingredients

  • 1 Tbsp butter
  • 1 cup diced onion
  • 1 cup mushrooms, coarsely chopped
  • ½ tsp salt
  • ½ tsp black pepper
  • ¾ cup ham, coarsely chopped
  • 2 cups fresh spinach, coarsely chopped
  • 2 cups shredded colby jack cheese
  • 6 eggs
