Can I make this quiche without the mushrooms?
Absolutely. I think all of these flavors work really well together but I understand that not everyone likes the same things! If you really dislike mushrooms you can leave them out and just make this as a ham and spinach crustless quiche.
Throw in another similar veggie if you’d like! The great thing about quiches is that they’re very forgiving and will usually come out alright even with ingredient changes and swaps.
What other changes can I make to this quick and easy quiche recipe?

With this crustless ham and spinach quiche you are letting the eggs create their own sort of shell for the recipe. In a traditional quiche recipe you’d have a pastry type shell on the outside like a pie crust and then you fill it with your quiche ingredients and bake.
I think a crustless quiche is quicker, easier, and of course is more friendly for those of you dealing with gluten allergies!
What do I need to make this easy spinach and ham quiche?
- Butter
- Onion
- Mushrooms
- Salt
- Black Pepper
- Ham
- Fresh Spinach
- Colby Jack Cheese
- Eggs
How to make a spinach mushroom & ham quiche:
- Preheat oven to 350 degrees. Spritz a 9 inch baking dish with non-stick cooking spray.
- In a large skillet, melt butter over medium-high heat. Add onion and mushrooms. Cook until tender, about 3 to 5 minutes.
- Add ham and spinach to skillet and heat through. Stir in the cheese. Transfer to baking dish.
- In a mixing bowl, whisk eggs. Pour eggs over ham and gently move ham and vegetables until the egg mixture is evenly distributed. Pat the quiche flat.
- Bake for 45 minutes or until the eggs are completely set.
- Allow quiche to rest for 5 minutes before slicing and serving.

- 1 Tablespoon butter
- 1 cup diced onion
- 1 cup mushrooms, coarsely chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¾ cup ham, coarsely chopped
- 2 cups fresh spinach, coarsely chopped
- 2 cups shredded colby jack cheese
- 6 eggs
Instructions

OMGoodness, thank you for catching that! You do need to bake it for 45 minutes for the eggs to cook through. I have updated the recipe card.

When do you add the cheese? I see no directions for the cheese in the instructions.
