What do I need to make this great recipe? 

Here is what you will need to make this tasty salad recipe. Most of the ingredients are fresh, tasty, and perfect for a hearty and healthy recipe for the whole family. 

  • cheese tortellini (fresh, dried or frozen)
  • red wine vinegar
  • fresh lemon
  • minced garlic
  • dried oregano
  • salt and pepper
  • extra-virgin olive oil
  • canned chickpeas
  • fresh spinach
  • grape tomatoes
  • carrots

How to put together this easy tortellini salad: 

  1. Bring a large pot of salted water to a boil over high heat and cook the tortellini according to the package directions.
  2. Drain and let cool slightly.
  3. In a small jar or bowl, combine the vinegar, lemon juice, garlic, oregano, and salt and pepper to taste.
  4. Place the lid on the jar and shake well or whisk until smooth.
  5. Add the olive oil and shake or whisk again to emulsify.
  6. In a large bowl, combine the tortellini, chickpeas, spinach, tomatoes, and carrots.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Adjust the seasonings as desired.
  9. Serve chilled or at room temperature.

Ingredients

  • 12oz. cheese tortellini (fresh, dried or frozen)
  • 1/2 cup red wine vinegar
  • Juice of 1/2 lemon
  • 1/2 tsp minced garlic
  • 1/2 tsp dried oregano
  • Salt and pepper
  • 1/3 cup extra-virgin olive oil
  • 2 cups cooked or canned chickpeas (rinsed & drained if canned)
  • 2 cups chopped fresh spinach
  • 1 (10oz) package grape tomatoes
  • 1/4 cup chopped peeled carrots

Instructions

    I'd try the jalapeño cornbread since I tend to have a plethora of peppers. Or the beet salad if I'm feeling brave.

    they all look delicious but the grilled pineapple chicken looks yummy
