Hamburger Soup?! My kids get excited when they hear it’s for dinner. This slow cooker hamburger soup is one of our easy crockpot soup recipes we keep in the meal plan rotation.

It’s a great recipe for dinners and even picky eaters really love this one. Slow cooker hamburger soup is always a win around our dinner table.

For those of you that like recipes you can dump into the Crockpot and let cook while you do other stuff, this hamburger soup is an awesome choice.

For years I’ve had a great meal-prep habit. I buy ground beef in bulk, and then I cook it all at once with chopped peppers and onions. I freeze portions in zipper freezer bags so that I have them on hand for busy weeknights.

That way, I just have to thaw it overnight in order to make quick beef tacos, a one-pot pasta meal or this yummy hamburger soup. With the meat pre-cooked, this becomes a simple load-the-crockpot-and-walk-away meal, my favorite kind!

If you only have raw ground beef on hand, you can use your slow cooker to make Barbeque Burgers instead.

Does this hamburger soup recipe have to cook in the crockpot?

This crockpot hamburger soup can also be cooked on the stove top, if you prefer. As long as your beef is pre-cooked, you can add all the ingredients to a large soup pot and simmer for 45-60 minutes, until the potatoes are tender.

When you cook this recipe on the stovetop you will just have to keep an eye on it where as cooking it in the slow cooker you are able to walk away and do something else while dinner prepares itself! Do what works for you.

What vegetables are in this soup?

I use mushrooms, carrots and red potatoes to go along with the onion and peppers that I put in my freezer-bagged ground meat mix. If you’re not a fan of these vegetables, put in whatever your family likes. Good options are corn, a can of diced tomatoes, fresh zucchini or green beans.

This recipe is naturally gluten-free, since the main carb is the red potatoes. If you prefer, switch that up to rice or pasta! You could also use something like quinoa as well. This is a very forgiving recipe that you can alter to suit your needs and tastes.

Salsa makes a great addition, you can mix things up and use whatever veggies you have on hand while preparing it, no need to run out for extra ingredients when you can just throw in what you like and have on hand!

Can I make this recipe and freeze it?

You can definitely prepare this recipe in advance and freeze it or keep it in the refrigerator to reheat throughout the week. It’s pretty simple to prepare since we’re using pre-cooked ground beef so I don’t usually make the whole recipe in advance.

I will typically make a batch at the beginning of the week and we use leftovers for easy lunches and dinners that can be thrown in the microwave with ease.

  • 1 lb ground beef, browned and drained

That's up to you. I don't peel red or golden potatoes because the skins are so thin. But if I have to use russets, I do peel them.

Great idea to cook up a large batch of hamburger and freeze some until needed! Why have I never thought of this? I always freeze it uncooked, then scramble to get the stuff defrosted in time to make dinner! This recipe sounds delicious - bonus points for being crock pot friendly!
